Position Overview

1. 负责西厨房冷菜区域的日常生产管理,包括菜品制作、出品质量控制及出餐时效保障;
2. 制定并执行冷菜类标准操作流程(SOP)及食品安全规范,确保符合国家餐饮服务食品安全标准;
3. 统筹冷菜组人员排班、技能培训与绩效协作,提升团队专业能力与作业效率;
4. 参与菜单研发与成本管控,协助控制食材损耗率及物料使用合规性;
5. 配合厨房整体运营需求,完成跨岗位协作及临时性工作任务。

1. 大专及以上学历,烹饪工艺、酒店管理或相关专业优先;
2. 具备2年及以上星级酒店或高端餐饮企业西厨房冷菜岗位工作经验,有主管或带教经验者优先;
3. 熟悉西式冷菜制作工艺、食品安全法规及HACCP基本要求,持有有效健康证明;
4. 具备良好的组织协调能力、质量意识和团队合作精神;
