About the Role
A leading 5-star property seeks a passionate Sous Chef to support the Executive Chef in managing kitchen operations, maintaining culinary excellence, and upholding food safety standards.
Key Responsibilities
- Supervise daily kitchen operations and lead service in the Executive Chef's absence
- Oversee food preparation, quality control, plating, and consistency
- Support menu development and cost control
- Manage stock, portioning, and supplier coordination
- Enforce hygiene and HACCP standards as per South African food safety regulations
- Train and mentor junior chefs and kitchen staff
Requirements
- Accredited Culinary Qualification (minimum NQF Level 5 or above)
- 3-5 years experience in a fine-dining or 5-star kitchen
- Proven leadership and communication skills
- Knowledge of HACCP and R638 food safety compliance
