Position Overview
The Blast Chill Food Safety Specialist does pre-quality assurance work involving coordination and movement of prepared food into and out of the Cryo-cabinet & Blast Chiller and into the production holding Ready to Eat (RTE) area where it is staged for the Pack Room, labeled, and allergens marked. Often a high-volume workload.
**Position responsibilities include, but not limited to**
+ Facilitate the proper chilling of cooked products through Cryo-cabinet (when appropriate) and through the Blast Chiller within HACCP timelines and regulations
+ Use digital thermometers to repeatedly check food in Blast Chiller; stir, move trays and carts, etc. to ensure food temps out within allotted time frame
+ Document temperatures and weights
+ Correctly weigh and label all finished product leaving Blast Chill
+ Move product to RTE and determine if food will remain on tray or placed in totes
